Bubbly Hot Cheesy Stuffed Tomatoes

I don’t know anyone that does not love tomatoes, this is a great vegetable for salads and this recipe for Cheesy Stuffed Tomatoes is supertb!  It’s easy to make, and it tastes great.  You could do this along with a baked salmon.

This is a stuffed tomato recipe that is popular with the low carb crowd due to the lack of any added bread crumbs, rice, or packaged stuffing mix.  Plum tomatoes are the ideal choice for this recipe due to the fact they are less watery than other tomatoes which makes the pulp you scoop out firmer. The tomato itself has a more concentrated flavor than many varieties.  That’s why sauces are often made from plum tomatoes.

  • 4 plum tomatoes
  • 1/2 cup shredded mozzarella cheese
  • 2 Tbsp grated fresh Parmesan cheese
  • 1/4 cup fresh basil leaves, torn small
  • 1 garlic clove, minced or grated
  • salt and pepper to taste

Preheat oven to 400 degrees.

Cut the plum tomatoes in half lengthwise and scoop the insides out onto a work surface, setting the tomato shells on a baking sheet, cut side up.

Chop up the insides that you scooped out and put in a bowl.

Add the remaining ingredients to the bowl and mix together until well blended.

Spoon this mixture into the tomato shells on the baking sheet.  Top with more Parmesan cheese if desired.

Put in oven and bake for 10 to 15 minutes or until the cheese is melted and starting to brown.

Remove and let cool slightly. Serve warm.

Makes 4 servings.

Recipe – Chicken Mushroom Burger

What’s better than beef on the BBQ? How about a great tasty lean meat, that cooks quickly and easily. Add some mushrooms to the mix, and you have a great tasting Chicken Mushroom Burger. There are several ways to make chicken burgers – you could ground the meat, or use chicken breast that is thinned out and you’ve got a great tasting burger. Here is a recipe that I’ve made several times, and it works out tastier each time.

Ingredients

7 ounces wild mushrooms or button mushrooms (chanterelle, porcini, shitake)
2 garlic cloves, minced
3/4 cup chicken broth
3 tablespoons bulgur
12 ounces lean ground chicken
2 tablespoons thinly sliced green onions
2 teaspoons Worcestershire sauce
1/4 teaspoon pepper
4 hamburger buns or kaiser rolls, split and toasted
Grilled red onion, sliced (optional)
Dijon-style mustard (optional)

Directions

  1. Remove stems and finely chop half of the mushrooms (1 cup); slice remainder and set aside.
  2. In a small saucepan cook the finely chopped mushrooms and garlic in 1/2 cup of the chicken broth for 4 to 5 minutes or until tender.
  3. Stir in bulgur.
  4. Return to a boil.
  5. Reduce heat to low.
  6. Cover and simmer for 10 minutes or until liquid is absorbed and bulgur is tender.
  7. Remove from heat; cool slightly.
  8. In a large mixing bowl combine chicken, green onion, Worcestershire sauce, and pepper.
  9. Add bulgur mixture; mix until combined.
  10. Shape into four 3/4-inch-thick patties.
  11. Lightly coat a cool rack of grill with nonstick cooking spray.
  12. Place patties on rack of uncovered grill directly over medium coals.
  13. Grill for 14 to 18 minutes or until burgers are firm and no pink remains, turning once halfway through cooking.
  14. Meanwhile, in small saucepan cook the sliced mushrooms in remaining broth, covered, until tender, about 4 to 5 minutes.
  15. To serve, spread mustard on bottom halves of rolls or buns, if desired.
  16. Place patties and some of the sliced mushrooms on top.

The one modification I’ve done with this recipe is rather than ground the chicken, I use chicken breast and thin it out and use that on a long bun instead.  You can get creative and try many variations in this recipe!

Recipe – Grilled Salmon Sandwich With Dill Sauce

Here is another great Salmon recipe, makes for a great lunch as well.  This recipe takes only 10 minutes of prep time, 15 minutes of cook time for a total of 25 minutes and makes two delicious sandwiches.

If you want to keep the fat content to a minimum, skip the bacon.

Ingredients

  • 4 slices bacon (OPTIONAL)
  • 1 (1 pound) fillet salmon, cut into 2 portions
  • 1 tablespoon olive oil
  • 1/3 cup mayonnaise
  • 1 teaspoon dried dill weed
  • 1 teaspoon freshly grated lemon zest
  • 4 slices country-style bread, toasted
  • 4 slices tomato
  • 2 green leaf lettuce leaves
  • Directions

    1. Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
    2. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Evenly coat the salmon with the olive oil.
    3. Cook the salmon on the preheated grill with the skin side down for about 5 minutes before flipping and cooking on the other side until the skin can easily be lifted off the flesh, about 5 minutes more. Flip the salmon once more and continue cooking until the salmon flakes easily with a fork, another 2 to 3 minutes.
    4. Whisk the mayonnaise, dill, and lemon zest together in a small bowl; divide between 2 of the toasted bread slices. Top each with 1 portion of cooked salmon, 2 tomato slices, 2 bacon slices, 1 lettuce leaf, and a remaining slice of toasted bread.

    And you’re done… a delicious sandwich, just in time for summer!

    Besides Salmon, What Is A Good Fish For Grilling?

    Someone recently asked us this question – besides Salmon, what is a good fish for grilling?

    Answer

    This one is easy.  Halibut, Cod, Tuna, Trout, any of the firmer fish.  Why a firm fish?  You don’t want it to fall through the grill. 

    If you want to grill Sole or Perch or a lighter meat fish then you will want to line the grill with tinfoil and poke holes in it with a fork to let the smoke and grilling flavors reach the food.  If you are grilling on a gas or charcoal grill brush some cooking oil on the grill and the fish — not to much or it will flare.  This helps the fish from sticking to the grill.  DO NOT USE an oil spray such as Pam as it is highly flammable.

    Recipe – Baked Dijon Salmon

    Here is another great Salmon recipe – but this one is done in the oven, not on the barbecue.  As I love mustard on just about anything, adding Dijon to this dish was delicious!  With 20 minutes preparation time, and only 15 minutes cook time – in about 35 minutes dinner will be ready.

    Ingredients

    1/4 cup butter, melted
    3 tablespoons Dijon mustard
    1 1/2 tablespoons honey
    1/4 cup dry bread crumbs
    1/4 cup finely chopped pecans
    4 teaspoons chopped fresh parsley
    4 (4 ounce) fillets salmon
    salt and pepper to taste
    1 lemon, for garnish

    Preparing this is a snap…

    Directions

    1. Preheat oven to 400 degrees F (200 degrees C).
    2. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
    3. Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
    4. Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

    And you’re done.

    On the side I”ll usually add green beans or other veggies that taste (and look) good when baked in an oven – carrots, or asparagus also go well or a blend of all three veggies.

    If you want some carbs as well, a small baked potatoe will also go well with this.
